Does it make me a bad mom if I am super glad the kids started school? I will admit, it was with a bit of mixed emotions. Now that the kids are older, they actually don’t mind hanging out together. That makes me happy because not only does it mean I have kids that actually like each other but I can get some work done! When the kids go to school, my stress level spikes a tad. Caitlin is in high school and her course load this year is really heavy. This means lots of homework, which means lots of griping and some tears! For Henry, who is homeschooled, his stress level isn’t as high as Caitlin’s. Mine however is higher because I have to put together lesson plans on top of all the other crap I have to do. Bearing this in mind, I try to lighten my load wherever I can. One area I put a lot of effort into is meal planning, prepping and cooking. When I can find a super quick and easy recipe, I gratefully incorporate it into my recipe box. One of our newest favorites are . These are so tasty and make for a fun after school snack.
PB&J Jell-O Jigglers Are A Fun After School Snack

Peanut butter and jelly is about as American as you can get, right? When I was a kid, we lived a block from our school. If you lived within a short walk, you were allowed to go home for lunch. Every day from Kindergarten to 4th grade, my sister and I had a PB&J sandwich, soup and chocolate milk. Ronni and I would dunk our sandwiches in our soup and then gulp down that cold and refreshing chocolate milk. Mom may not have been super creative when it came to fun after school snacks, but she knew how to make a mean PB&J sandwich!
So, for this PB&J Jell-O jiggler recipe, you only need a few ingredients. I bet you have just about everything in your kitchen already. I almost always have marshmallows and peanut butter as well as jello. The kids are big grape jello fans, so I usually have a few boxes of that in my fridge. I love PB&J with strawberry jelly, so for me, this recipe would be tasty with strawberry jello! And talk about easy? The prep time is about a minute, the mixing of the ingredients takes about 2 minutes and the you have to wait for the peanut butter layer to set.
After the peanut butter layer is nice and firm, you make the jello. This takes about 2 minutes as well. After that, you just let them chill out in the fridge for a few hours. They were ready by the time Caitlin got home and she dove into them! My husband wanted to know what I made that was so popular! He popped one in his mouth and he said, “OMG, these taste exactly like PB&J without the bread!!” My husband rarely eats sweets, so this was something I knew he would like. It is definitely not overly sweet because the peanut butter fluff balances out the grape jello. So, the next time you need to make a fun after school snack on the fly, make these PB&J Jell-O Jigglers from Kraft.
