One of our biggest struggles is eating healthy, especially on the fly. You know how it is…kids in and out of the house. Grabbing what they can before they disappear into the back yard again!
But, who am I to make fun of the kids and how they eat?! Honestly, it is a struggle to find healthy snacks for myself too. Snacks that taste like cardboard or are full of fat and high fructose corn syrups and sugars are available everywhere. But, for me, I am trying to be a better example for my kids. Making healthy choices is something they need to see me do. Those choices mean for what I eat, drink and the amount of exercise I get. That is why the products from TruMoo are such a staple in our home.
We have been big fans of TruMoo for years. Initially, we loved our TruMoo Chocolate Milk because it tastes great. There is nothing better than an iced cold glass of TruMoo on a hot summer day! OR we grab one of my Homemade Toasted Coconut Banana Fudgesicles! Because we on the go a lot in the summer, I keep a small cooler in the back of the car. Guess what I fill it with? Let me tell you about the “TruMoo No’s”. TruMoo has:

What I didn’t know until recently, is that chocolate milk is the perfect recovery drink. So many world class athletes say chocolate milk is their go-to beverage after a workout. After you workout, chocolate milk helps restore the fluids you lost while you were exercising. It also gives you the perfect balance of carbs and protein, which is key in promoting muscle protein synthesis. It doesn’t hurt that TruMoo is made with low-fat white milk and only has 140 calories per cup.
Here is what you need to make my Homemade Toasted Coconut Banana Fudgesicles;
- TruMoo 1% Low Fat TruMoo Chocolate Milk
- 2 large ripe bananas
- 1 cup of fresh coconut
- Popsicle Mold. I love this Popsicle Maker set from Sweet Creations, which even comes with the Popsicle sticks!
Here is the recipe to make my Homemade Toasted Coconut Banana Fudgesicles:
- Pre-heat your oven to 350 degrees. Spread out your fresh coconut onto a baking mat. Bake for 10 minutes, or until just browned. Stir occasionally. Allow to cool and place in an airtight container.
- In your blender or food processor, add 2 ripe bananas and 3-4 cups of TruMoo chocolate milk. Blend well.
- Pour into your Popsicle mold and freeze overnight.
- Run mold under hot water for a few seconds until the fudgesicles pop out.
- Spread your coconut onto a shallow dish. Press one of your fudgesicles into the toasted coconut. Press firmly. Turn over and repeat.
- Enjoy your Homemade Toasted Coconut Banana Fudgesicles!
