I grew up in a family who loved food. My mom and grandmother were excellent cooks and my dad, me and my siblings were more than happy to eat whatever they put in front of us! My girls have the same foodie heart as their mom and are good eaters. And then came my son. Where did this picky eater come from? Surely it must be from my husband’s side of the family, right?! Well, not exactly.
His aversion to most foods comes from his autism. He will only eat certain foods, due to texture and taste issues. We have a list of what he will eat…there is about 10 things on it. One of the favorites that is at the top of the list are Goldfish® crackers. For years, the only snack he would eat was a peeled apple, a bit of peanut butter and a cup filled with his favorite flavor of Goldfish® crackers. Heck, to be honest, the whole family has a heart for Goldfish® crackers, each with their own preference.
I love the Goldfish Made with Whole Grain Cheddar, while Caitlin loves the Goldfish Pretzel and Henry is all about the Cheddar or the Colors Cheddar Goldfish® crackers. When I was asking what everyone wanted in their Christmas stockings, Henry said, “Just stuff mine with a bunch of Goldfish® crackers and I will be happy!” Than my daughter’s boyfriend, Mike chimed in and said he wanted that as well! Well, OK then!! We love Goldfish® crackers because they are such a great snack (and now mealtime) solution. I feel great serving them to my family and they sure do love eating them!
The on-the-go packs are perfect for road trips, or when when we go to the park. The boxes of Goldfish® crackers are perfect for family movie night (who needs popcorn when you have Goldfish® crackers?) or just because. We buy our Goldfish® crackers from Walmart, where they are often on rollback (yay for saving money!) They always have a great selection, so I can get a box for everyone in the family.
One of my favorite meals is my grandmother’s meatloaf. My sister and I have called it her “Best Meatloaf On The Planet Recipe” for as long as I can remember. The recipe was passed down to my mom and then to my sister and I. Mom would substitute half of the bread crumbs for crushed buttered crackers. When trying to get Henry to eat more than chicken nuggets for dinner, I tried to coax him into eating my meatloaf. He hesitated and asked what went into this meatloaf recipe. I showed him the ingredients and he said, “If you put Goldfish® crackers instead of the buttery kind, I bet it would taste better!” Well, yes sir!!
So, I put about 1/4-1/2 cup of Goldfish® crackers in the food processor and crush them up. This is added into my recipe in lieu of the buttery crackers. Can I just tell you how delicious this meatloaf is? It sure does live up to it’s name, that’s for sure! When my daughter and future son-in-law were here for Christmas, they asked me to make the “Best Meatloaf On The Planet Recipe.”
They had not heard it was made with the Goldfish® crackers, so I surprised them. Henry was so excited that as soon as Mike took a bite, she shouted, “There are Goldfish® crackers hiding in the meatloaf!” Needless to say, everyone loved the meatloaf and had seconds…there were no leftovers!
- 1 pound ground chuck
- 1 pound ground sausage
- 1/4 cup minced onion
- 1/8 cup diced garlic
- 1 egg, lightly beaten
- 1 tbsp. Worcestershire sauce
- 1 tbsp. soy sauce
- 1/4 cup milk
- 3 tbsp. plain Greek yogurt
- 1/4 cup seasoned bread crumbs
- 1/4 cup crushed Goldfish® crackers
- 1 tbsp. butter
- 1 tsp. salt and pepper to taste
- 1 can tomato sauce, divided
- 1/8 cup brown sugar
- 2 tbsp. ketchup
- Preheat oven to 350
- In a medium saucepan, heat butter. Add onion and garlic, cook until onions are translucent (about 4-5 mins. )
- In a large bowl, add all ingredients except the brown sugar, ketchup and remaining tomato sauce. Mix these in a small bowl and set aside. This is for the topping. When you add the milk, so so slowly, so your mixture is moist, but not super watery looking.
- Add mixture to a standard loaf pan.
- Bake for 35-40 mins. Take pan out of oven. Add topping and bake for an additional 10-15 minutes.
