When I became old enough to legally drink, I was living in Atlanta. The Underground in Atlanta was a popular place to shop and eat and drink…mostly to drink. It was a rite of passage at that time that you would have your first drink at the Underground. When the waitress came to take our order, I was completely unprepared for this heavy decision before me. Did I want beer? A shot? An cocktail? Well, like a starving chocoholic in a candy store, of course I ordered all three! I did the shot, chugged the beer and drank the cocktail. I also did all of this within a 15 minute time frame. Of course you know what came next, right? Yep…me on the bathroom floor moaning to my Mom that I was dying! It was a long time until I was able to drink another Tequila Sunrise! As an adult, I have been able to pace myself much better and an ice cold Tequila Sunrise is a favorite drink of mine, both with and without tequila. One of my newest crazes mixes my love of that drink and ice pops. May I introduce you to my Virgin {or not} Tequila Sunrise Popsicles?! These are a great treat to go along with my Firecracker Hot Dog recipe!
Tequila Sunrise Popsicles
When I get up in the morning, I stand in front of the coffee maker while it brews, sipping a cold glass of orange juice. I just cannot imagine waking up any other way! There is something about that refreshing mix of sweet and a bit tart of that orange juice in my Hard Rock Cafe glass! The kids have gotten their love for OJ honest, so they will be standing there right with me (sans the coffee.) When I am sitting on the deck while I watch my husband man the grill, I enjoy a Tequila Sunrise cocktail. The kids will be sitting with me sipping on a Virgin Tequila Sunrise. If it is really hot, we will la up the icy goodness of my Tequila Sunrise Popsicles! I make a batch for the adults as well as a batch for the kids. All you do is leave out the tequila for the kids (Duh!!)
I love the flavor of orange in just about anything. I eat it in pies, jello, smoothies and I love those ice cold Tequila Sunrise Popsicles! I will use either Orange Juice or Sunny D in this recipe, depending on what is on sale at the grocery store. The kids prefer grenadine in their Tequila Sunrise Popsicles, while I like cranberry juice. You can easily adapt this recipe to match the flavors you prefer. This recipe also works well if you want to use grapefruit or pineapple juice.
Make sure not to get the kids Virgin Tequila Sunrise Popsicles confused with your Adult Tequila Sunrise Popsicles. The best way I have found to do that is to use Popsicle sticks for mine and the plastic tops that came with the Popsicle molds for the kids. You can also make one batch in the Popsicle molds and one batch in plastic or paper cups. Whatever works for you and keeps the kids from getting buzzed!
Tequila Sunrise Popsicles
Ingredients
- 1/2 cup cranberry juice cocktail (or grenadine)
- 2 tablespoons lime juice
- 2 teaspoons honey
- 1 1/2 cups orange juice (or Sunny D)
- 1/4 cup gold tequila (leave this step out for a yummy kid's treat)
Instructions
- In a measuring cup with pouring lip, combine cranberry juice cocktail (or grenadine), lime juice, and honey.
- Using 8 plastic frozen pop molds or 3-ounce paper cups, pour 4 teaspoons of the juice mixture into the bottom of each.
- Freeze for 1 hour or until firm but not hard. In another liquid measuring cup combine orange juice (or Sunny D)and tequila.
- Carefully pour orange juice mixture over cranberry mixture. Cover paper cups with foil and insert wooden craft sticks into cups or insert pop mold sticks into pop molds; freeze overnight. Remove pops from molds or tear off paper and remove foil before serving.
- Makes 8 frozen pops.
