I love it when I see my kids doing or saying something that I know they got from me. You know, like that certain sideways glance you do and then you see your kid doing the same look to their brother? And then there are the physical traits that when you compare them to you or your spouse, there is no denying who the kid belongs to. You know, like the thick hair, blue eyes or maybe a laugh? My mom had an impeccable sense of style, was petite and could play a wicked game of hearts. My dad was a big lug with thick legs, a terrible sweet tooth and short temper.
Guess who I took after?! Yep, my dad! I have his thick, tree trunk legs, short fuse and a love of desserts. One of my favorites? Strawberry shortcake. I make mine a bit differently than a traditional shortcake, which is more like a biscuit. I make mine with a traditional pound cake, fresh strawberries and whipped cream. Caitlin absolutely loves anything with lemon flavor. As a matter of fact, when she was 2 or 3, she took a bite of a lemon and she loved it!! When she asked for strawberry shortcake, I will tweak my traditional pound cake recipe and make a Strawberry Lemon Shortcake instead.
This Strawberry Lemon Shortcake does not have an overpowering taste of lemon. My husband is not a huge fan of lemony foods, but this pound cake he actually likes. When I make lemon pound cake, I usually make a lemon glaze to go on top. For this recipe, you can do the same. Just let it soak in and then cut into it for the parfait.
I love making this Strawberry Lemon Shortcake as a parfait in a mason jar. I am all kind of obsessed with mason jars right now. I will make just about anything I can that will work in a mason jar. If you are taking this Strawberry Lemon Shortcake parfait to a picnic, all you do is put on the mason jar lid and you are good to go. It really travel quite well. If you bring this Strawberry Lemon Shortcake parfait to your next get together, your guests are going to be begging you for seconds as well as the recipe!
Strawberry Lemon Shortcake Parfait
Ingredients
- 1?2 cup butter, melted
- 1 cup sugar
- 2 eggs, well beaten
- 1 tablespoon lemon juice
- 1?4 teaspoon salt
- 1 1?2 cups flour
- 1 teaspoon baking powder
- 1?2 cup milk
- 1?4 cup lemon juice
- 1?4 cup sugar
- 1 small container of whipped topping
- 1 pint of strawberries
Instructions
- Preheat oven to 325 degrees.
- Grease loaf pan
- Mix 1 cup sugar and butter together.
- Add eggs and lemon juice; mix well.
- Add salt, flour, and baking powder to mixture.
- Add milk.
- Bake for 45,or until golden brown.
