This foodie can eat a ton of deliciously spicy foods! I love recipes that are sure to tantalize my taste buds! On a recent trip to visit my daughter and son in law, I came across one of the best dips this side of the border! This Mexican Beef and Cheese Dip recipe is absolutely amazing! It would be a great appetizer for my White Pork Enchiladas with a Creamy Green Sauce. Both are great for your game day or Cinco de Mayo party.
While thumbing through a crock pot recipe book, I came across a spicy chorizo sausage dip that sounded really yummy. My daughter and I are not big fans of chorizo, so I decided to take the basic recipe and change it up a bit. This Mexican Beef and Cheese Dip has lean ground beef instead of the chorizo. Also, I found a chipotle salsa in the International foods section of the local grocery store that I thought would be really flavorful.
I added some fresh tomatoes, onions, garlic and cilantro from the local farmer’s market. The result was one of the best appetizers I have ever made. As a matter of fact, what was meant to be a starter dish ended up being the main course. The three of us ate so much of this Mexican Beef and Cheese Dip, we didn’t leave any room for the main course!
We ended up wrapping that and having it for lunch the next day! If you do happen to leave any of this dip, it is even better the next day! I prefer eating this with warmed flour tortillas but the kids chose blue tortilla chips instead. Either way, as long as it gets this yummy dish into my belly works for me!
Ingredients
- 1 lb of lean ground beed
- 1 can of chili beans
- 1 can of black beans
- 1 can of chopped green chilies
- 1 can of chipotle salsa
- 1 small onion, diced
- 1/8 cup diced garlic
- 1 fresh jalapeno, seeded and diced
- 1 teaspoon Tabasco sauce
- 2 cups of shredded Mexican blend cheese
Instructions
- Brown ground beef in a skillet. Add onions and garlic.
- Add all other ingredients except the cheese and simmer on low for 15-20 minutes.
- Add cheese and simmer until melted.
- Garnish with fresh cilantro and serve with tortilla chips
