I come from a long line of men and women who have served our country, so the 4th of July has always been a big deal to us. Not only did we celebrate being together as a family, but we reflected upon those family members who had served in the armed forces. My brothers left for Vietnam right before the 4th of July, so that year we found it hard to be in a celebratory mood. Mom reminded us we were happy and healthy, we were together and we had two men who we were serving to make our country a safer place. ‘
When it came to the 4th of July, our family went all out! Every year, our dad was at the helm of the grill while mom made her potato salad, fried chicken, biscuits and no bake mini cheesecakes with Sugar Honey Maid Graham crackers. My younger sister and I were in charge of setting the table and when no one was looking, taste testing all the goodies!
Instead of living in fear of this diagnosis, we embraced it and became a stronger family for it. I have passed these rules on to my own children. My family may not be perfect, but we strive to live a wholesome lifestyle, both of which I feel are important traits.
A company whose products have always been a staple in our house is Honey Maid. As long as I can remember, we have had a box of those delicious crispy crackers on hand. Just like my mom taught me and I have taught my children, family is family and our special bond is what bring us together.
Part of that bond is our love for our fellow human beings, regardless of age, culture, sexuality or relationship status. No matter how things change, what makes us wholesome never will. For my version of mom’s no bake mini cheesecakes, I used Chocolate Teddy Grahams. They add another depth of flavor that makes this recipe stand out. This is a super easy recipe and the results are going to make your mouth and your tummy pretty happy!!
The mixture of the cream cheese, sugar and whipped topping comes out cream and smooth. It has just the right balance of tart and sweet! They would be the perfect dessert for my White Queso Burgers or Firecracker Hot Dogs.
Patriotic No Bake Mini Cheesecakes
- 1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
- 1/2 cup sugar
- 1 tub (8 oz.) COOL WHIP Whipped Topping, thawed
- 2 cups Chocolate Teddy Grahams
- 2 Tbsp. red, white and blue sprinkles
- Beat cream cheese and sugar until blended. Gently stir in COOL WHIP.
- Place 6 Chocolate Teddy Grahams in each of 12 paper-lined muffin cups; top with cream cheese mixture and sprinkles.
- Refrigerate 1 hour.
