Gluten Free Cinnamon Swirl Bread Recipe
When I was growing up, my mom cooked virtually everything from scratch. They didn’t have all the pre-made mixes in the grocery store like we do today.
One of my favorites was mom’s Cinnamon Swirl Bread. Because Henry has some gluten sensitivities, I tweaked her recipe and made a Gluten Free Cinnamon Swirl Bread Recipe.
This bread only takes a few minutes to mix together. Within a few minutes of baking time, you get the most intoxicating smells coming from the oven! I don’t care if my kids are dead asleep, if they smell this Gluten Free Cinnamon Swirl Bread Recipe, they are up an pacing the floor waiting for the finished product! I think the secret to this great tasting Gluten Free Cinnamon Swirl Bread Recipe is in the sugary sweet cinnamon crumble in the middle. It is just about the best thing since, well, sliced white bread! We eat it warm with the a cold glass of milk. I will wrap it up and put a slice in the kid’s lunchbox. IYou need to try it with a scoop of vanilla ice cream for dessert after our evening meal. Yum!
You know me, I am all about versatile recipes, and this is one of them! I usually make a double batch so I can keep one and give one. When Caitlin has an early robotics or scholar’s bowl meeting, I will send a loaf of this Gluten Free Cinnamon Swirl Bread Recipe for the kids. They cannot get enough of it!
Gluten Free Cinnamon Swirl Quick Bread
Ingredients
- 2 cups gluten free flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 3/4 cups granulated white sugar
- 1 cup buttermilk
- 1 egg
- 1/3 cup canola or coconut oil
- 1 teaspoon vanilla extract
- Swirl:
- 3 teaspoons ground cinnamon
- 1/4 cup brown sugar
- 1/4 cup granulated white sugar
Instructions
- Preheat oven to 350°
- Spray a loaf pan with vegetable oil
- In a small bowl, combine cinnamon and brown and white sugar.
- In a large bowl, combine flour, white sugar, baking powder and salt.
- In a separate bowl, combine buttermilk, egg, oil and vanilla extract; stir into dry ingredients just until moistened.
- Pour half of the batter into pan; sprinkle with half the cinnamon-sugar mixture
- Carefully spread with remaining batter and sprinkle with remaining cinnamon-sugar; cut through batter with a knife to swirl.
- Bake 45-55 minutes or until a toothpick inserted in center comes out clean.
- Cool 10 minutes before removing from pan to a wire rack to cool completely.

The second time, I used coconut oil and it was spilling over the sides into the over. I am not sure what I am doing wrong. Any suggestions? They don’t see KA flour at my grocery store, so I am using Bob’s Red Mill.

October 20, 2017 at 2:43 pmThis does look good. I’ve tried some gluten free baked goods and they weren’t very good. This one does look just like the ones that have gluten. I hear that if you give up gluten some people feel a big difference in their health. I’m thinking of trying that diet.
