Thank you to the Crunchies company for sponsoring this post. They made it possible for me to make these Vegan Chocolate Chunk Mixed Berry Cookies. Believe me, these cookies taste as good as they look… maybe even better. I don’t know which my kids love the most, the chocolate chunks or the berries!
Who doesn’t love cookies, right? They make a great after school treat (bring on the milk!) or a portable “on the go” snack option. Since these Vegan Chocolate Chunk Mixed Berry Cookies freeze well, why not make a double or triple batch and keep some in the freezer? You never know when you might experience a late-night, cookie-craving attack!
Baking cookies of any kind is a great family activity. With the popularity of kids cooking shows on TV these days, more and more kids are jumping on the bandwagon. My kids love to help in the kitchen, especially when I am making something they love. Lately, they cannot get enough of these Vegan Chocolate Chunk Mixed Berry Cookies! A similar recipe we tried that we also love are my Vegan Breakfast Cookies.
These Vegan Chocolate Chunk Mixed Berry Cookies make a great breakfast option as well. We run late most mornings, so a grab and go meal is what works best for us. These cookies are as filling as they are tasty. What sets them apart from other vegan cookie recipes is that I use the all natural freeze dried fruits from Crunchies.
These freeze-dried fruit snacks are taking the country by storm! You may have read about Crunchies in magazines like Marie Claire and Clean Eating. The snacks come in 10 varieties at the moment; Beets, Blueberries, Cinnamon Apple, Grapes, Mango, Mixed Fruit, Pineapple, Raspberries, Strawberries, and Strawberry Banana. They’re GMO-free, gluten-free, vegan, Halal, and Kosher Parve.
Crunchies are free from artificial flavorings and preservatives. I love that they own their supply chain from the field to fork. They’re one of the few snack companies that can say this. They work with farmers to make sure every pack only contains the highest quality fruits.
Traceability is very important to Crunchies. Each package has a Traceability Code that you can enter on the website. With this, you’ll be able to see the route your snack took from the moment it was harvested.
What is most amazing about Crunchies though is their freeze drying process. The fruit and vegetables are harvested when they’re perfectly ripe. They get cleaned and freeze dried using a combination of temperature and pressure. This allows the fruit to preserve most of its color and nutritional value. Though most importantly it keeps the fantastic flavor of the fresh fruit. Be sure to follow Crunchies on Facebook, Twitter and Instagram. One USA reader will win a variety pack of Crunchies ARV $50.
Ingredients
- 1/2 cup whole wheat flour
- 2 cups rolled oats
- 1 cup Crunchies Dried Fruit of your choice (I used Blueberries, Strawberries and Raspberries)
- 1 1/2 cups vegan chocolate chunks
- 1/2 teaspoon baking soda
- 1/4 cup mashed banana
- 1/2 cup packed brown sugar substitute
- 1/2 cup applesauce
- 1/3 cup water
Instructions
- Preheat oven to 350 degrees.
- In a small bowl, add flour, baking soda and salt.
- Add in your brown sugar, vanilla, water, banana and applesauce.
- Add in the oats, dried fruit, and chocolate.
- If your mixture is too wet, cover with plastic and chill for a few hours.
- Add a dollop of mix, using a large ice cream scoop, onto your baking sheet or in your muffin tin , Allow room for some spreading. Bake 16-18 minutes. Allow to cool on a wire rack.
Do you eat a vegan diet or tried it? I am just getting my toes wet with a few recipes. I would love to hear your thoughts about the subject!

May 27, 2017 at 12:12 pmWe don’t follow a vegan diet, but do have meatless meals on occasion. My wife and I wanted to have some Indian food for dinner the other night, and pulled out packets of Butter Chicken Curry mix, and she discovered we were out of chicken, but had plenty of cauliflower, broccoli, zucchini, and squash, so we ended up with Butter Veggie Curry for dinner that night. Delicious!
