There is something about having one of “those” mornings, you know? It makes you want to jump back in the bed, pull the covers over your head and have a “do-over.” You know what I am talking about, right? When the alarm didn’t go off, the kids won’t get out of bed, the dog is running circles around you wanting to be fed and you cannot find your car keys? Ugh! And forget about making the kids a decent breakfast, right?
Make Ahead Muffins Make Mornings Easier
I hate to have the kids go to school on an empty stomach. It leaves them unprepared for a morning of learning before they can eat lunch. When we are in a hurry to get to school, the kids can take one or two of my Sour Cream Lemon Poppy Seed Muffins. This is a recipe my kids never get tired of and is something I can eat on the go as well. The balance of the tart and sweet is so good! And the sour cream in the recipe makes them super moist! Not only are they easy to make, but are super cheap compared to the grocery store bakery version!
A Breakfast The Kids Never Get Tired Of
I usually make these Sour Cream Lemon Poppy Seed Muffins recipe while I am making dinner. After they are cooled, I can keep them in an air tight container or put a few in a Ziploc baggie. As we head out the door for school, the kids can grab a few along with a juice box or container of milk. Another favorite “muffin” we make on busy school nights are my Skinny Meatloaf Cupcakes With Mashed Potato Frosting Recipe. The kids love them and they are so easy to make!
Ingredients
- 2 tablespoons poppy seeds
- 1 tablespoon lemon extract
- 1 package yellow cake mix
- 1/2 cup sour cream
- 1 1/4 cups water
- 1/3 cup canola oil
- 1/2 cup egg substitute
- 1 tablespoon lemon zest
Instructions
- Set oven to 350 degrees.
- Spray cupcake pan (or use cupcake liners)
- Prepare cake as directed on package for cupcakes except instead of the 3 eggs, use the egg substitute, add 1/4 more water and add the sour cream. Stir poppy seeds, lemon extract and lemon zest into cake mix.
- Fill each muffin 2/3 full
- Bake 19 to 23 minutes.
