Although I am from up north, I am not a cold weather girl. How about you? Do you prefer warm or cold weather? I live in the south now, so our winter season is mild. We only have a month or so of frigid weather. When it is cold outside, I love to get a pot of soup going. There is nothing like a hot bowl of soup to warm the soul, right?! One of our favorite recipes is my Skinny Slow Cooker Southwestern Black Bean Tortilla Soup.
My husband loves loves Tex-Mex food. I make it at least 1-2 times a week. This Skinny Southwestern Slow Cooker Black Bean Tortilla Soup recipe is a pot full of Tex-Mex love! I call it my “kitchen sink” recipe. I get out the crock pot and toss in anything I can find that resembles a Tex-Mex or Southwestern ingredient.

This Skinny Slow Cooker Southwestern Black Bean Tortilla Soup recipe is easy to make as well as versatile. Other than browning the ground turkey, nothing else needs to be cooked. You toss your ingredients into the slow cooker and let it work its magic. In a few hours, you have one of the most flavorful and filling soups you have ever had!
As with many soup recipes, this Skinny Slow Cooker Southwestern Black Bean Tortilla Soup can be tweaked to meet your needs or wants. You can add other vegetables or use ground beef instead of turkey. You can add white or kidney beans as well as green beans.
I love avocados, but my husband doesn’t. I will top his soup with just sour cream, a little cheese and fresh cilantro. For mine, I go all out! I add the toppings my hubby loves as well as the avocado. The tortilla chips add a nice crunch. Trust me when I tell you, this is a recipe you are going to make often! It freezes beautifully, making it a great dish for potluck dinners, new moms or your Wednesday night church supper.
Ingredients
- 1 pound ground turkey, cooked and drained
- 4 cups vegetable broth or stock
- 1 jar of salsa
- 1 can black beans, drained and rinsed
- 1 can of kidney beans, drained and rinsed
- 1 can diced tomatoes
- 1 package frozen corn
- 1 medium onion, diced
- 1 tbsp. garlic, chopped
- 1 can diced green chilies
- 1 tbsp. red pepper flakes
- 2 packets taco seasoning
- Fresh cilantro, avocado, tortilla strips and sour cream for garnish
Instructions
- In your slow cooker, add all of your ingredients. Cook on low for 3-4 hours. Top with sour cream, avocado, tortilla strips and fresh cilantro. Easy, right?!
