Healthy Asian Quinoa Chicken Salad Recipe
This weekend my husband and I ran errands and then stopped for a bite to eat. As we were waiting for our food to arrive, we were talking about all the things we wanted to do this summer. One constant in our summer line-up is a lot of time outside grilling and chilling.
Summer Salads Are A Staple In My House!
When it comes to what’s on the menu in the summer, you will not find a bunch of heavy foods. Instead, salads are a staple in my house.
I enjoy a light, refreshing and good for you salad…like my Healthy Asian Quinoa Chicken Salad Recipe. This salad is always a huge hit at our BBQ’s, pot lucks, summer block party or just because it’s Tuesday!
Healthy Salad Recipes
For this recipe, I use Swanson Chicken Broth and truRoots Quinoa, both of which I get from Sam’s Club. I love getting a great deal on the 32 oz. Swanson Chicken Broth, so I stock up! I use it in so many of my recipes.
Swanson enhances the flavors of the recipes I make. It’s unique blend of flavors is trusted by chefs and brings out the joy in cooking. When I am cooking my chicken for my Healthy Asian Quinoa Chicken Salad Recipe, I use Swanson Broth.
Quinoa? Who Knew?!
A friend recommended I try substituting quinoa in some of my favorite recipes. I was leery as I had not even heard of quinoa before. I tried it in one of my favorite casseroles and it was so good! Quinoa? Who knew?! Now I use this super food in many of my favorite recipes.
I prefer to use truRoots Quinoa from Sam’s Club. Quinoa is an excellent swap for rice. And the truRoots is Certified USDA organic, Non-GMO, and is Gluten Free.
Be A Block Party Hero
Making my Healthy Asian Quinoa Chicken Salad Recipe is super easy. I first cook my chicken in the crockpot with 2 cups of Swanson Chicken Broth. I cook it on high for 3-4 hours and shred it when it’s done.
An Easy To Make Recipe
Next, I add 2 cups of Swanson Chicken Broth to one cup of truRoots. I cook that on the stove top. After that, I whisk together my “dressing” ingredients. The dressing is tossed in with my truRoots, slaw mix, peppers and almonds.
Because this recipe is versatile, you can serve it on it’s own in a bowl or on your favorite sprouted bread. Talk about easy and super delicious! This recipe will quickly become a go-to side in your home as well!
Ingredients
- 1 1/3 cup truRoots Quinoa
- 2 cups Swanson Chicken Broth
- 1 tablespoons extra-virgin olive oil
- 1 tablespoon sesame oil
- 2 tablespoons soy sauce
- 1 teaspoon ginger
- 1/4 lemon juice
- 2 cups shredded cooked chicken (I cook mine in the slow cooker)
- 1 cup cole slaw mix
- 1/2 cup slivered almonds
- Salt and ground black pepper to taste
Instructions
- Bring 2 cups Swanson Chicken Broth to a boil. Stir in truRoots Quinoa and reduce heat. Cover and simmer until tender and most of the liquid is absorbed, 15 to 20 minutes. Uncover and set aside to let cool.
- In a large bowl, whisk together lemon juice, soy sauce, ginger, olive and sesame oil. Add salt and pepper to taste. Add truRoots Quinoa and toss to combine. Add chicken, slaw mix and almonds and toss again. Serve in a bowl or on croissants.
