So, this weekend my husband and I did our usual thing. We ran errands and then stopped for a bite to eat and took in a movie. It was such a gorgeous day, it felt great to be out in the sun and just chilling with my best guy. What really threw me for a loop was how hot is was! I was in jeans and a lightweight top and I was sweating just a bit! As we were waiting for our food to arrive, we were talking about all the things we wanted to do this summer. One constant in our summer line-up is a lot of time outside grilling and chilling.
Summer Salads Are A Staple In My House!
We live in the south, so when it gets hot outside, it also gets really humid. When it comes to what’s on the menu, you will not find a bunch of heavy foods. Instead, summer salads are a staple in my house. And not just a ho-hum garden salad. Nope! I am talking about a light, refreshing and good for you salad…like my Asian Quinoa Chicken Salad. This salad is always a huge hit at our BBQ’s, pot lucks, summer block party or just because it’s Tuesday!
When it comes to the quality ingredients I use in my Asian Quinoa Chicken Salad, I don’t skimp. I use Swanson Chicken Broth and truRoots Quinoa, both of which I get from one of my favorite places to shop; Sam’s Club. As much as I use Swanson Broth in my house, I am new to cooking with quinoa. When I was diagnosed with prediabetes about 6 months ago, I had to make a lot of radical changes in my diet. Making my Asian Quinoa Chicken Salad is super easy. I first cook my chicken in the crockpot with 2 cups of Swanson Chicken Broth. I cook it on high for 3-4 hours and shred it when it’s done. I love cooking in the crock pot in the summer because it cut’s down on the heat you get from using the oven. While my chicken is cooking,
I add 2 cups of Swanson Chicken Broth to one cup of truRoots and cook that on the stove top. Then I just whisk together my “dressing” ingredients and toss in my truRoots, slaw mix, peppers and almonds. Serve it on it’s own in a bowl or on your favorite sprouted bread. Talk about easy and super delicious! This recipe will quickly become a go-to side in your home as well!
- 1 1/3 cup truRoots Quinoa
- 2 cups Swanson Chicken Broth
- 1 tablespoons extra-virgin olive oil
- 1 tablespoon sesame oil
- 2 tablespoons soy sauce
- 1 teaspoon ginger
- 1/4 lemon juice
- 2 cups shredded cooked chicken (I cook mine in the slow cooker)
- 1 cup cole slaw mix
- 1/2 cup slivered almonds
- Salt and ground black pepper to taste
- Bring 2 cups Swanson Chicken Broth to a boil. Stir in truRoots Quinoa and reduce heat. Cover and simmer until tender and most of the liquid is absorbed, 15 to 20 minutes. Uncover and set aside to let cool.
- In a large bowl, whisk together lemon juice, soy sauce, ginger, olive and sesame oil. Add salt and pepper to taste. Add truRoots Quinoa and toss to combine. Add chicken, slaw mix and almonds and toss again. Serve in a bowl or on croissants.
