I am a night owl. Mornings are hard. My children take after me. This makes mornings even harder. Last night, I was up until 3 am. My mind would not shut off. My daughter was up until 2:30 am. She could not keep herself from her new ukulele. Sigh. To say we we racing against the clock this morning would be an understatement.
Breakfast My Kids Can Eat In The Car
When I am pressed for time in the morning, I need a quick breakfast solution my kids can eat in the car. That would be my Sausage And Honey Cornbread Muffins. They are light, sweet with honey (Winnie the Pooh would love them!) and has enough protein to get them through to lunch without a rumbly in their tumbly.
A Sticky Breakfast In My Car?!
I know what you are thinking…I would never let my kids near my car with a muffin dripping with honey. Agreed. Our car is fairly new and my husband’s pride and joy. He would kill me if he knew I let my kids eat in the car, let alone something sticky. So..you have two choices; leave off the honey (boo!) or put the muffin in a food container and give them a plastic fork.
Now my kids are teens, so I can trust them with food on the go more than when they were five. So..your choice. I won’t judge either way. I promise! These Sausage And Honey Cornbread Muffins are delicious either way!
Healthy And Just As Tasty
Since I am counting calories, I cannot afford to waste my precious 1,500 a day allotment. If I am going to splurge, I need to make it healthy one. I love to take a recipe that was once a calorie count sucker and make it healthier. With this Sausage And Honey Cornbread Muffins recipe, I made a few changes to my original and cut my calories by one-third.
This way, I get all of the flavor without breaking my calorie bank. Yay me!! And trust me, the kids have no clue they are eating something healthy. Yay me again! And these Sausage And Honey Cornbread Muffins freeze well, so you can make them on Sunday and they are good all week! Yay me yet again! After you drop the kids off, have one of these with one of my White Chocolate Caramel Lattes. Not as healthy, but still good! Enjoy!
Ingredients
- 1 cup all purpose flour
- 1/2 cup cornmeal
- 1/2 cup corn flour
- 1 tbsp baking powder
- 1/4 cup granulated sugar substitute
- 1 tsp salt
- 1 cup low fat buttermilk
- 3 Tbsp. egg substitute
- 1/4 cup butter substitute
- 1/4 cup honey
- 1/2 pound turkey sausage, browned
- 1/4 cup diced red peppers, sauteed
- 1/4 finely diced sweet onion, sauteed
Instructions
- Preheat oven to 350. Add dry ingredients to a medium size bowl. Whisk together. Add wet ingredients. Mix well. Add sausage, peppers and onion. Scoop into muffin tins sprayed with vegetable oil or lined with cupcake liners. Fill about 2/3 full. Bake for 22-24 minutes, or until lightly brown. Drizzle with honey.
