Is your weather still crazy hot? Well, I just walked outside and it is so hot and humid at 9 am that my glasses fogged up! By living in the south, we expect warm weather until well into October. I have been known to wear shorts on Thanksgiving Day! It is days like these that I am thankful for air conditioning in the house as well as in the car!
I like the kids to have a snack after they get home from school. I try my best to have something that is more on the healthy side. Because Caitlin has such a long day, I try to get some protein in her snacks to get her through her homework until dinnertime. Her favorite cold treat are pudding pops. Because I use whole milk, Caitlin gets 8 grams of protein in each pudding pop.
Treats On The Healthy Side
As we were making a batch of her favorite warm weather snack, Caitlin asked if she could help. Um, yes! At 17, she loves to be in the kitchen and has been taking charge of the easier recipes we make. When I came out to check on her, she had the food coloring out and was adding it into the vanilla pudding we made! She said she wanted something colorful and wanted to make Rainbow Pudding Pops! Fine by me!
Rainbow Pudding Pops
These Rainbow Pudding Pops are super easy to make. You just need one box of vanilla or cheesecake pudding for each color and 2 cups of whole milk per box. If you prefer a less fatty milk, please do. They will set just fine. We made 6 boxes so Caitlin could play with the different layers of color. We made the pudding in six bowls and added several drops of the food coloring to get the desired color. Next, you need small Dixie cups and a tablespoon. Add one tablespoon of each color into your paper cup. Add a wooden Popsicle stick and freeze for 4-6 hours. Peel off your paper and enjoy!
