Salads are a mainstay in our home. This is especially true in the summer. We have a small house, so when we use the oven, it can heat up the entire house. We have begun eating a more plant based diet. This means lots of fruits and veggies are the stars of many recipes. One of my favorite salads is a Greek Salad. I love all the flavors when blended together.

Recently, I created a Mediterranean Orzo Salad with Homemade Citrus Vinaigrette recipe. It uses my basic Greek salad recipe with a few unexpected additions! We love orzo, so that small pasta was a fun ingredient to add. We also use avocados, which are a favorite of my husband.
The addition of my Reese® Hearts of Palm and Marinated Artichoke Hearts amp up the flavor in this recipe! Have you tried Hearts of Palm? Ingredients
- 1 1/2 cups cooked orzo pasta
- 1 can of Reese Hearts of Palm
- 1 jar of Reese Marinated Artichoke Hearts
- 1 cup cherry or Roma tomatoes, halved
- 1 cucumber, chopped
- 1 red onion, chopped
- 1 cup feta cheese, crumbled
- 1 can of black or Kalamata olives, drained
- Dressing:
- 1/4 cup apple cider vinegar
- 3/4 cup olive oil
- 3 tablespoons lemon juice
- 3 tablespoons orange or grapefruit juice
- 2 tablespoons honey
- 1 tablespoon spicy mustard
Instructions
- In a mason jar, combine all salad dressing ingredients. Shake well until ingredients are incorporated and emulsified.
- In a large bowl, combine pasta and salad ingredients. Toss well. Refrigerate for at least one hour.
- When you are ready to serve your salad add salad dressing and toss well.
